Mint Chocolate Muddy Buddies for St. Patty’s Day

There’s no part of me that is Irish.  None.  In fact, I’ve never been to Ireland, I know very little about their culture or food (fish and chips? Shepherd’s pie? Lucky Charms?) , and admittedly when I try to put on my best Irish accent, I end up sounding more like a pirate.  So when St. Patrick’s day comes around each year, you won’t find me rummaging through my closet for every green article of clothing I own…  BUT…  before you get your pinchers out, I’ll tip my hat to the Irish with a great recipe that you’ll love and would surely have pleased St. Patty himself.  Mint Chocolate Muddy Buddies (because they are green – which is the required celebratory color — and they are great for party munching  – which is the required celebratory activity).  Bring to your office lunch celebration, or surprise your kids with a bagful in their lunchbox, and I can guarantee the Luck ‘O the Irish will be on your side!

Mint Chocolate Muddy Buddies (with Andes Mints!)

Ingredients

  • 3 cups powdered sugar
  • 1 box rice chex (divided)
  • 8oz chocolate candy melt
  • 5oz white candy melt
  • 5oz dark green candy melt
  • 1 packet Andes mints (4.28 ounces / unwrapped)
  • 3 tablespoons cocoa powder
  • 2 gallon ziploc bag
  • large strainer
  • mint M&M's or green chocolate button candies (optional)

Directions

Step 1
Measure 2 cups of rice chex into a large mixing bowl. Measure ¾ cup powdered sugar into the 2 gallon bag. Melt white candy melt in a microwave safe bowl for 1 minute – stir and continue to melt in 15 second intervals until smooth. Pour over the rice chex and stir gently to cover completely. Pour covered rice chex into the 2 gallon bag with powdered sugar in it, close and toss until all the chex are completely covered. Empty into a large strainer, and aggressively shake the strainer until ALL excess powdered sugar is off. Pour finished candy chex into a clean large container.
Step 2
Clean and completely wipe dry the large mixing bowl. Repeat this exact same process with the green candy melts and 2 cups of chex. Pour finished candy chex into the container with the white candy chex.
Step 3
Clean and completely wipe dry the large mixing bowl. Repeat this exact same process melting the chocolate candy melts and unwrapped andes mints together, and coating the remainder of the box of chex. This time you will use 1 ½ cups of powdered sugar and the cocoa powder in the 2 gallon bag for tossing.
Step 4
Pour finished chocolate candy chex into the container with the white and green candy chex. Gently toss the container so all three colors are combined evenly. Mix in M&M’s .
