Hearty Beef Chili & Sweet Cornbread

Soooo…. the Cubs are in the world series (Go Cubs GO!) with the next game set for tomorrow night, and there’s a lot of really great college football games on this weekend.  That means one thing and one thing only — YOU NEED THIS CHILI.  I made this a few weeks ago and it was delicious – and the leftovers were honestly even better.  The next day my girlfriend Trisha and I had a garage sale and it was cold outside — we sold our wears and downed giant bowls of this chili and it was working!  The chili takes a total of 90 minutes to make from start to finish and the cornbread is even easier. I have alot of recipes for cornbread that I mix and match depending on the “main entree” – but since this was a weeknight dinner, I opted to start with a box of Miracle Maize Sweet Cornbread mix and just made a few adjustments.  Easy, quick and seriously amazing.  I like to slice it in wedges and lather it with a little honey butter, but you can also just take a big fork, set the skillet in your lap, and dig into it like you’re alone and no one is watching. Its entirely up to you and I won’t judge you.  Make it, pin it, love it!

Hearty Beef Chili & Cornbread

Ingredients

  • 2lb Ground Beef
  • 1/2 Medium Yellow Onion (chopped/diced)
  • 3 cloves Garlic (chopped)
  • 15oz Tomato Sauce
  • 2 tablespoons Chili Powder
  • 2 teaspoons Cumin
  • 3/4 teaspoons Ground Oregano
  • 1 teaspoon Salt
  • 1 teaspoon Garlic Powder
  • 1/4 teaspoon Cayenne Pepper
  • 1/4 cup Masa Harina (fine corn flour, found in the mexican food aisle)
  • 1 can Kidney Beans (drained & rinsed)
  • 1 can Canellini Beans (drained & rinsed)
  • 3/4 cups Corn (cooked / set aside)

Directions

Step 1
In a large dutch oven, brown the ground beef, chopped onion, and minced garlic. When the beef is browned through (do not drain), add the tomato sauce, 1/2 a cup of water, and all the spices. Stir well, reduce the heat to low, cover and let simmer for 1 hour.
Step 2
In a small bowl, mix the masa harina with a 1/2 cup of warm water - stir well. Add to the beef mixture and stir until it is incorporated. Add in the beans and corn. Add more water if you desire a thinner consistency (by 1/2 a cup at a time). Simmer for 30 minutes.
Step 3
Serve with jalapenos slices (for those who like it hot!), shredded cheese, sour cream and cornbread!
Step 4
For the cornbread - Preheat a cast iron skillet (10inch) in a 400 degree oven with 2 tablespoons butter. In a medium bowl, pour entire contents of a box of Miracle Maize Sweet Cornbread mix. Add 1/3 cup oil, 3/4 cup milk, 2 eggs and 1/2 a can of cream-style corn. Pour into the hot skillet with butter and bake for 25-28 minutes.
